Childhood Obesity – An Avoidable Epidemic

If it were medically feasible, would you consider allowing your 10 or 12 year old to go under the knife for gastric bypass? This is a decision that as a parent, most of us would probably answer, “No.” However, there are a lot of overweight/obese children and adolescents that despite known risks, actually want this procedure, because their life would be so much easier. Less bullying, less stress, and a better life…or so they imagine. For some, this is simply hypothetical. For others, this is a reality.

What’s the deal?

Childhood obesity has more than doubled in children and tripled in adolescents in the past 30 years. What are we doing as a society that has allowed our children to succumb to such a growing epidemic? During a keynote address recently, First Lady Michelle Obama had a message for parents with questionable eating and exercise habits:

“We as parents are our children’s first and best role models, and this is particularly true when it comes to their health,” she said, pointing to research that kids with one obese parent are more than twice as likely to become obese as adults. “We can’t lie around on the couch eating French fries and candy bars, and expect our kids to eat carrots and run around the block. But too often, that’s exactly what we’re doing.”
We always say that the children are our future. Let’s help them MAKE it to the future. There are several harmful long term effects that could be potentially fatal, if childhood obesity is not curbed. The fact is, children and adolescents who are obese are likely to be obese as adults, and are therefore more at risk for adult health problems such as heart disease, type 2 diabetes, stroke, several types of cancer, and osteoarthritis.

How did we get here?

Well, as mentioned earlier, thirty years ago, most people led lives that kept them at a healthy weight. Kids walked to and from school everyday, ran around at recess, participated in gym class, and played for hours after school before dinner. We prepared home-cooked meals and served reasonable portion sizes and there was always a vegetable on the plate. Eating fast food was rare and occasional treat.

Today, some of our children live and experiences a totally different lifestyle. Walks to and from school have been replaced by car and bus rides. Gym class and after-school sports have been cut. A lot of times, their afternoons are now spent watching TV, playing video games, and on the Internet. Nowadays, parents are busier than ever and home-cooked meals may be far and far between.

As a society, it seems that we have become habitual snackers. Snacking between meals is very commonplace. Whereas thirty years ago, kids ate just one snack a day, now they are trending toward three snacks, resulting in an additional 200 calories a day — and one in five school-age children has up to six snacks a day. Lastly, our food and beverage portions have grown tremendously. They are now two to five times bigger than they were in years past. The average sugar-sweetened beverage was 13.6 ounces compared to today. A lot of kids think nothing of drinking an entire 20 ounces of sugar-sweetened beverages at one time.

What can we do?

There are a lot of online resources that give us options when our goal is guiding our kids (and family, period) towards a healthier lifestyle. Here are just a few:

1. Lead by example. Let your kids see YOU munching on raw fruits and veggies and drinking water instead of soda.

2. Reward with attention, not food. Let’s not reward our children with sweets. It leads them to believe that those foods are “better” than nutritious foods.

3. Make physical activity fun for the whole family. When the weather permits, go for walks or jogs and just have fun together.

4. Take your kids grocery shopping with you (I know, I know…sometimes this can be a headache.). This is a great opportunity to discuss food and nutrition and allow your children to make healthy choices.

We are our children’s biggest influence. Let’s help them develop good healthy eating habits and be proactive with their good food choices versus trying to change some bad habits that could potentially cost them the quality of their lives!

Once they get over that, then we’re in! Besides all of the healthy reasons for you to purchase or “dust off” your blender, why not treat yourself? They taste great! Half (or whole) banana

Heaping Handful of spinach (or your fave green, Kale is too strong for me)

1/2 cup of ice

1 cup of vanilla flavored almond milk (The illustration above says juice…your call)

Blend and ENJOY! Do what I do, put this recipe in baggies and freeze them, so all you have to do is dump them and add your almond milk. I can truly see the benefits of my meal replacements. An Unforgettable Experience: 2013 Presidential Inauguration

January 21, 2013. A date that my family will not ever forget – The second inauguration of President Barack H. Obama! The first inauguration in 2009, my hubby and I decided that my one year old (who’s now 5 years old) wouldn’t stand a chance in the harsh winter conditions that year. THIS TIME? We said, sorry Baby Girl (our now one year old) you’re bundling up! We’ve been given a second chance to see our POTUS being sworn in. Let’s go!

There were lots of undeniably awesome things that made our inauguration experience great. From the moment we arrived at our hotel, Washington Hilton, we knew it was going to be a fabulous weekend! We were greeted at the front desk with extreme courtesy and attentiveness. Our room was upgraded to an executive suite and that’s exactly what parents of THREE energetic children want to see… plenty of space for them to be FREE!
When we opened the door, on display was a table of adorable little gifts that made the kids run and squeal with excitement. Yes, even my tween. Caps, purses, activity books, light up pens, and more!

They didn’t forget the parents. They made sure that the hubby and I had a bottle of red and bottle of white (they really did their research) tons of inauguration souvenirs and paraphernalia for us to cherish along with an experience of a lifetime. I thought it was pretty cool that they provided plenty of fruits, veggies and yummy cheeses for us to enjoy!

We had a great time meeting up with my family and seeing old friends, and of course, eating at what I like to call the “gems of DC”. These are restaurants that are unique to DC. I absolutely loathe restaurant chains when I visit other places. I want the full experience when I travel. The next time you’re in the Capitol, please don’t leave without stopping by the famous D.C. landmark, Ben’s Chili Bowl without grabbing a Half-Smoke…or Lauriol Plaza for a Lobster and Shrimp Enchilada…or Matchbox for a Bistro Burger. You can thank me later!

We attended the ceremonial swearing in for President Barack Obama and it was great to be a part of it all.

After now living in below freezing temps for the greater part of the Winter, these temps felt like Spring (okay, maybe not, but it was definitely doable).

The kids not only had an experience of a lifetime, being a part of such a historical event, but because it was such a whirlwind weekend, we missed our opportunity to visit Newseum or Madame Tussaud’s Wax Museum before heading back home. :-( However, we still have e-tickets, so that means that we’ll be back! YAY!!

As parents, you always want your children to have unforgettable memories that leave a lasting imprint on their lives. Thanks to Hilton Hotels, namely Washington Hilton and their “hands down” impeccably attentive staff, we think we actually did just that!

I certainly hope that next time, I get the chance to actually attend on of the inaugural balls. I can only imagine that this is another fabulous event that puts the icing on the cake of such a powerful political weekend.

Easy & Healthy Salmon Dinner – A Weekly Dinner Favorite

Do you know why its so important to incorporate salmon into your family’s diet? It contains essential fatty acids which are essential to overall health and the prevention of various diseases. In addition to this, Omega-3′s in salmon:

  • helps reduce cholesterol level by increasing the good cholesterol and reducing the bad cholesterol.
  • help to repair heart damage and strengthen heart muscles.
  • help to prevent or reduce the risk of heart disease.

The amino acids in salmon in combination with Vitamin’s A and D:

  • help with brain and nerve functions.
  • help to prevent the deterioration of the brain and nerves caused by aging.
  • help to lower the risk of blood clots which cause strokes.

Salmon also helps speed up the metabolism. (Who doesn’t want this??) In addition to helping provide your skin and hair with added nutrients. One 4-0z serving of salmon contains 30 grams of protein and a full days worth of Vitamin D. (Are you in love with this fish yet, or what??)

I’m so happy that I have acquired a taste for this healthy fish. (If only I could get my son on board.) I’ve also found that its quite easy to prepare and it cooks well with different types of marinades. If you remember a while back, I posted a 30 minute meal featuring Honey Soy Salmon. It is so easy and delicious, I just don’t think its fair that its my husband’s favorite meal to eat. (wink wink)

So, in an effort to inform you of the wonders of this “super fish”, I just wanted to share with you, what exactly had me “winning” with my husband the other night. It was like taking candy from a baby…Wait, why do people say that? They must not know my babies.

Anywho, I won’t bore you with any more fish facts, but I will share my quick and easy salmon dinner secret with you.

First, find the type of salmon you like (Wild, Atlantic, Sockeye, etc), marinate it for at least 30 minutes or (like I prefer) overnight in your favorite marinade. There are sooo many varieties out there now, its mind-boggling. I like a Bourbon or a Teriyaki sauce with [a little] sea salt, freshly ground black pepper, minced garlic and lemon juice. Bake this for 20 minutes on 400 degrees F and broil for the last 10 minutes. While you’re preparing the salmon, you can prepare and be done with your Uncle Ben’s Fast Cook Recipe Rice. If this is not in my pantry, I must be losing brain cells….My family loves it!

The only other thing you need to do, is pair your “super fish” with an “awesome white”. Any varietal will do. This particular night, I had a California White Table Wine and it was a match made in heaven. The notes of the wine danced all over my taste buds and complimented our meal to perfection. By the way, I get two of these wonderful bottles of vino: one white and one red every month, courtesy of California Wine Club. Its like Christmas every month!

Easy Pinterest-Inspired Recipe

This is a Pinterest-Inspired recipe that I pinned from a friend. So easy that my 12 year old son did everything except clean and cut the chicken!!!

Place your chicken, potatoes and green veggie in a 9×13 dish. Sprinkle a packet of Italian Salad Dressing mix over everything and top with EVOO/butter/both. Cover and bake at 350 degrees for one hour and Vóila!!! Enjoy!

30-Minute Meal: Smoky Corn & Black Bean Pizza

I spotted this great recipe on Eating Well. It looks amazing and I can’t wait to try it! A great recipe that’s ideal for Summer and under 500 calories!

The secret to a grilled pizza is having all your ingredients ready to go before you head out to the grill. This recipe is 6 servings:
  • 1 plum tomato, diced
  • 1 cup canned black beans, rinsed
  • 1 cup fresh corn kernels, (about 2 ears)
  • 2 tablespoons cornmeal
  • 1 pound prepared whole-wheat pizza dough
  • 1/3 cup barbecue sauce
  • 1 cup shredded mozzarella, preferably smoked mozzarella

The original recipe didn’t give detailed instructions, so I’m thinking that you layer your barbecue sauce, then your veggies and cornmeal – then top with your mozzarella

To make the meal complete just toss the extra black beans, diced tomato and some avocado with pre-washed salad greens and a tangy vinaigrette and you’ve got a meal!

And you know me….a nice glass of Syrah to compliment the smoky flavor….Ahhhh… Love it!

Hump Day Health Tip: Put That Can Down!

Here are a few health tips on improving your overall nutrition. As, I have learned from those who are successful in losing and maintaining their ideal body weight, its all about healthy lifestyle choices and not the quickest, fad diet.

1. Buy whole foods — whether frozen, fresh from the farm or canned (last resort) — and use them in place of processed foods whenever possible.
2. Reject foods and drinks made with [high-fructose] corn syrup, a calorie-dense, nutritionally empty sweetener that many believe is worse for the body than sugar.
3. Start each dinner with a mixed green salad. Not only will it help reduce your appetite for more caloric foods, but it also will automatically add veggies to your meal. (I especially do this to calm the “natives” when they’re screaming, “I’m hungry! I’m hungry!” and I’m not quite finished with dinner.)
4. And I know you’ve heard it before, but try it just once. You’ll be very proud of yourself. Shop only the PERIMETER of the grocery store. Have you ever noticed that only the essential/whole foods on on the perimeter of the grocery (refrigerated to remain fresh)? Your produce, your meat/seafood, your dairy, etc. Out of habit, you’ll want to go up and down the aisles, but try it…just once and create a healthy habit for yourself.

Yummy, Quick & Easy Seasoned Chicken Strips « Pennylove.

Please check out this quick and easy Recipe from Pennylove, an amazing blog all about healthy, recipes that will impress your hubby, your guests and even yourself! I’ve never made my own crispy, tender chicken strips, but now I just might have to! Here’s the recipe:

I like to use Chicken Tenderloins for this recipe because they are, as their name suggests, tender. However, Chicken Breast cut into 2 inch strips work just as well. I also use Pan Searing Flour because it is already seasoned and gives the chicken a bit of a crispy coating. I have only been able to buy it at  Wegmans. So if you do not have it at hand, you can just use regular flour. One other thing I prefer is Garlic Flavored Olive Oil. However, non flavored EVOO (Extra Virgin Olive Oil) works just as well.

Ingredients

1lb Chicken Tenders

2 Tablespoons Pan Searing Flour

1 Teaspoon Paprika

2 Teaspoons Seasonings

1 Tablespoon plus 1 teaspoon EVOO

1 Tablespoon fresh garlic

1 Tablespoon fresh or dried herbs

In a large bowl, lightly season the chicken with your favorite chicken Seasonings (Lemon-pepper, Seasoned Salt or Salt & Pepper) and the dried herbs. Also, add 1teaspoon of the EVOO. Mix everything so that the chicken is evenly coated in the oil & seasoning. Be careful not to over season the meat as the Pan Searing Flour already has seasoning in it. Let the chicken marinate for 15-20 minutes.  Place the strips on a large cutting board & lightly coat the chicken with the Pan Searing Flour.

In a large non-stick skillet, heat 1 tablespoon EVOO & add the garlic. Once the oil is hot, place the chicken strips in the skillet. Let the chicken cook for about 3-5 minutes on each side or until the internal temperature is 165 degrees.

Once done, remove the chicken from the skillet & place on a paper towel lined plated to absorb any excess oil. These strips are great by themselves, or served as the entrée (as shown below) along with your favorite side dishes for dinner.  Bon Appetit!

There are few things  I love more than a great outdoors festival! During my visit to home in Birmingham, AL, I had the pleasure of attending a festival sponsored by The Jones Valley Teaching Farm. This is an urban teaching farm created to empower the youth to eat smarter, think healthier and live longer. I LOVE THE CONCEPT! Once I did a quick Google search of this, me, my mom, her friend and my baby girl all headed to Downtown Birmingham and we were in for a treat!!! On a hot Saturday, 4 days before the official start of Summer, live music, fresh food and a really cool vibe are all you need to have a good time.

Here is the list of some of the vendors at the festival. My only regret is that I didn’t get a chance to taste everything (try not to drool on your laptop/tablet):

  • Biscuit Love: Made-from-scratch biscuits served with fried chicken, sausage gravy or preserves.
  • Cantina on Wheels: Tacos.
  • Dreamcakes: Cupcakes.
  • Farm 255: Italian sausage made with pork from Moonshine Meats, served with a garlic aioli and a golden raisin agrodolce, which is a sweet-and-sour sauce.
  • Fresh Off the Bun: Vietnamese tacos.
  • Honeysuckle Gelato: Various flavors of gelato made from farm-fresh fruits and produce.
  • Jim ’N Nick’s Bar-B-Q: Hot links and pimento cheese.
  • The Marlay House: Fish¤’n’¤chips.
  • Martin’s Bar-B-Que Joint: Hickory-smoked pork sandwiches with coleslaw.
  • Scott’s Bar-B-Que: Whole-hog pulled pork on Texas toast with cracklings.
  • Shindigs Catering: Korean steamed buns with Fudge Family Farms pork belly, Greensboro catfish and Folsom Custom Cuts beef.
  • Steel City Pops: Frozen pops made from seasonal fruits and vegetables.
  • Stones Throw Bar & Grill: Grilled Bayou L Batre shrimp lettuce wraps with watermelon mint salsa.


In scorching temperatures, we found a few stolen moments underneath the shade to be golden. Here are a few pics from the festival. Enjoy!

Although there were lots of food trucks there, the food was nothing but fresh in every sense of the word. I wish I had more room in my belly to have indulged a little more. It was great to see farmers there, selling their produce as well. Its always great to see farmers getting paid for producing good, quality fruits and veggies. We bought some tomatoes and you could taste the freshness! Needless to say for my first weekend being back at home, it was a great time!
